Soybean oil is extracted from beans of the soy plant. They grow in pods after the blossom period. Soybeans contain a high content of protein, predominantly used for animal feed and increasingly in retail products such as vegetarian products and soymilk.
Soybean oil consists of long chains of unsaturated fatty acids. Linoleic fatty acid (C 18:2) is the main element at 55% and omega 3 (C 18:3) fatty acid at 7% is considered to contribute to the maintenance of normal blood cholesterol concentrations.
